Keto Fried Rice
Ingredients
- 1 head Cauliflower grated
- 2 tbsp Sesame oil
- 2 cloves Garlic minced
- 1/2 cup Onions diced
- 1/2 cup Carrots diced
- 1/2 cup Celery diced
- 1/2 cup Frozen peas
- 2 Eggs beaten
- 2 tbsp Soy sauce or coconut aminos for a soy-free option
- 1/4 tsp Ground ginger
- Salt and pepper to taste
- 2 Green onions sliced for garnish
- Sesame seeds for garnish
Instructions
- Grate the cauliflower using a grater or food processor.
- Heat a large skillet or wok over medium-high heat and add the sesame oil.
- Add the garlic, onion, carrots, celery, and frozen peas to the skillet. Cook for about 5 minutes or until the vegetables are tender.
- Push the vegetables to one side of the skillet, and add the beaten eggs to the other side. Scramble the eggs until cooked through.
- Add the grated cauliflower, soy sauce, ginger, salt, and pepper to the skillet. Toss everything together until well combined.
- Cook for an additional 5 minutes or until the cauliflower is tender.
