  • 1 lb. Pork tenderloin cut into bite sized pieces
  • 1/2 cup Almond flour
  • 1/2 tsp. Salt
  • 1/4 tsp. Black pepper
  • 2 tbsp. Coconut oil
  • 1/4 cup Apple cider vinegar
  • 1/4 cup Low-sugar Ketchup
  • 1/4 cup Swerve sweetener
  • 2 tbsp. Tamari or soy sauce
  • 2 Garlic cloves minced
  • 1/2 tsp Ginger grated
  • 1 Bell pepper sliced
  • 1 Onion sliced
  • 1 tbsp. Sesame seed optional

Instructions
 

  • In a bowl, mix together the almond flour, salt, and black pepper. Add the pork pieces and coat them in the almond flour mixture.
  • Heat the coconut oil in a large skillet over medium-high heat. Once the pan is hot, add the pork and cook until browned on all sides, about 5-7 minutes.
  • In a separate bowl, whisk together the apple cider vinegar, ketchup, Swerve sweetener, tamari or soy sauce, garlic, and ginger.
  • Add the sliced bell pepper and onion to the pan with the pork and sauté for another 2-3 minutes until they start to soften.
