Ingredients
  

  • 1 Head of cauliflower grated
  • 1/2 cup Mozzarella cheese shredded
  • 1/4 cup Parmigiano Reggiano cheese grated
  • 1 Egg beaten
  • 1 tsp. Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup Marinara sauce
  • Additional toppings of your choice (e.g. pepperoni, diced vegetables, etc.)

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the grated cauliflower, mozzarella cheese, Parmigiano Reggiano cheese, beaten egg, Italian seasoning, salt, and pepper. Mix well.
  • Using your hands, shape the mixture into small, bite-sized rounds and place them on the prepared baking sheet.
  • Bake in the oven for 15-20 minutes, making sure they don't overcook.
  • Remove from the oven and top each bite with a dollop of marinara sauce and additional toppings of your choice. Such as mozzarella cheese and/or pepperoni.
  • Bake in the oven until cheese is melted, about 3-5 minutes. Remove from oven.
  • Serve hot and enjoy!
