- 1 cup Almond flour
- 1/2 cup Macadamia nuts chopped
- 1/4 cup Erythritol or other keto-friendly sweetner
- 1/4 cup Coconut oil melted
- 1 Egg
- 1 tsp. Vanilla extract
- 1/4 tsp. Baking powder
- 1/4 tsp. Salt
In a mixing bowl, combine the almond flour, macadamia nuts, erythritol, baking powder, and salt.
In a separate bowl, whisk together the melted coconut oil, egg, and vanilla extract.
Slowly add the wet ingredients to the dry ingredients and mix until well combined.
Form dough into small balls and place them on a baking sheet lined with parchment paper.
Press down on each cookie dough ball with a fork to flatten.
Optional. Add a few keto friendly white chocolate chips to each cookie.
Bake for 12-15 minutes or until the edges are golden brown.
Remove from the oven and let cool for 5 minutes before transferring to a wire rack to cool completely.
