- 1 cup Almond flour
- 1/2 cup Macadamia nuts chopped
- 1/4  cup Erythritol or other keto-friendly sweetner
- 1/4 cup Coconut oil melted
- 1 Egg
- 1 tsp. Vanilla extract
- 1/4 tsp. Baking powder
- 1/4 tsp. Salt
- In a mixing bowl, combine the almond flour, macadamia nuts, erythritol, baking powder, and salt. 
- In a separate bowl, whisk together the melted coconut oil, egg, and vanilla extract. 
- Slowly add the wet ingredients to the dry ingredients and mix until well combined. 
- Form dough into small balls and place them on a baking sheet lined with parchment paper. 
- Press down on each cookie dough ball with a fork to flatten. 
- Optional. Add a few keto friendly white chocolate chips to each cookie. 
- Bake for 12-15 minutes or until the edges are golden brown. 
- Remove from the oven and let cool for 5 minutes before transferring to a wire rack to cool completely.
