- 10 Large Jalapenos
- 8 oz. Cream cheese softened
- 1/3 cup Cheddar cheese grated
- 1/4 cup Parmigiano Reggiano grated
- 1/4 cup Bacon diced
- 1 Green onion thinly sliced
- Salt and pepper to taste
- Cooking spray
Preheat oven to 400°F (200°C).
Cut off the tops of the jalapenos and remove the seeds and membranes.
In a bowl, mix together the cream cheese, cheddar cheese, parmesan cheese, bacon, green onion, salt and pepper.
Stuff the mixture into the jalapenos.
Place the jalapenos on a baking sheet lined with parchment paper.
Lightly spray the jalapenos with cooking spray.
Bake for 15-20 minutes, or until the cheese is melted and the jalapenos are slightly browned.
Serve warm.
