  • 1 Tomato diced
  • 1 Avocado diced
  • 1 Red onion diced
  • 1/4 cup Fresh cilantro chopped
  • 1 tbsp. Chili powder
  • 1 tsp. Cumin
  • 1 tsp. Paprika
  • Salt and pepper to taste
  • Salsa, guacamole, and sour cream for serving (optional)

Instructions
 

  • Preheat your oven to 400°F.
  • In a mixing bowl, combine the crushed pork rinds, chili powder, cumin, paprika, salt, and pepper.
  • Spread the pork rind mixture on a baking sheet in a single layer.
  • Bake for 10-15 minutes, or until the pork rinds are golden brown and crispy.
  • Remove the pork rinds from the oven and sprinkle with cheddar cheese and Monterey Jack cheese.
  • Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  • Remove the pork rind nachos from the oven and top with jalapeno, tomato, avocado, red onion, and cilantro.
  • Serve the nachos with salsa, guacamole, and sour cream, if desired.
