- 1 bag Pork rinds crushed
- 2 cups Cheddar cheese shredded
- 1 cup Monterey Jack cheese shredded
- 1 Jalapeno diced
- 1 Tomato diced
- 1 Avocado diced
- 1 Red onion diced
- 1/4 cup Fresh cilantro chopped
- 1 tbsp. Chili powder
- 1 tsp. Cumin
- 1 tsp. Paprika
- Salt and pepper  to taste
- Salsa, guacamole, and sour cream for serving (optional)
- Preheat your oven to 400°F. 
- In a mixing bowl, combine the crushed pork rinds, chili powder, cumin, paprika, salt, and pepper. 
- Spread the pork rind mixture on a baking sheet in a single layer. 
- Bake for 10-15 minutes, or until the pork rinds are golden brown and crispy. 
- Remove the pork rinds from the oven and sprinkle with cheddar cheese and Monterey Jack cheese. 
- Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly. 
- Remove the pork rind nachos from the oven and top with jalapeno, tomato, avocado, red onion, and cilantro. 
- Serve the nachos with salsa, guacamole, and sour cream, if desired.
