Ingredients
  

  • 1 head Cauliflower grated
  • 2 tbsp Sesame oil
  • 2 cloves Garlic minced
  • 1/2 cup Onions diced
  • 1/2 cup Carrots diced
  • 1/2 cup Celery diced
  • 1/2 cup Frozen peas
  • 2 Eggs beaten
  • 2 tbsp Soy sauce or coconut aminos for a soy-free option
  • 1/4 tsp Ground ginger
  • Salt and pepper to taste
  • 2 Green onions sliced for garnish
  • Sesame seeds for garnish

Instructions
 

  • Grate the cauliflower using a grater or food processor.
  • Heat a large skillet or wok over medium-high heat and add the sesame oil.
  • Add the garlic, onion, carrots, celery, and frozen peas to the skillet. Cook for about 5 minutes or until the vegetables are tender.
  • Push the vegetables to one side of the skillet, and add the beaten eggs to the other side. Scramble the eggs until cooked through.
  • Add the grated cauliflower, soy sauce, ginger, salt, and pepper to the skillet. Toss everything together until well combined.
  • Cook for an additional 5 minutes or until the cauliflower is tender.
  • Serve the cauliflower fried rice hot and garnish with green onions and sesame seeds.
