- 2 tbsp Sesame oil
- 2 cloves Garlic minced
- 1/2 cup Onions diced
- 1/2 cup Carrots diced
- 1/2 cup Celery diced
- 1/2 cup Frozen peas
- 2 Eggs beaten
- 2 tbsp Soy sauce or coconut aminos for a soy-free option
- 1/4 tsp Ground ginger
- Salt and pepper to taste
- 2 Green onions sliced for garnish
- Sesame seeds for garnish
Grate the cauliflower using a grater or food processor.
Heat a large skillet or wok over medium-high heat and add the sesame oil.
Add the garlic, onion, carrots, celery, and frozen peas to the skillet. Cook for about 5 minutes or until the vegetables are tender.
Push the vegetables to one side of the skillet, and add the beaten eggs to the other side. Scramble the eggs until cooked through.
Add the grated cauliflower, soy sauce, ginger, salt, and pepper to the skillet. Toss everything together until well combined.
