- 1 lb. Pork tenderloin cut into bite sized pieces
- 1/2 cup Almond flour
- 1/2 tsp. Salt
- 1/4 tsp. Black pepper
- 2 tbsp. Coconut oil
- 1/4 cup Apple cider vinegar
- 1/4 cup Low-sugar Ketchup
- 1/4 cup Swerve sweetener
- 2 tbsp. Tamari or soy sauce
- 2 Garlic cloves minced
- 1/2 tsp Ginger grated
- 1 Bell pepper sliced
- 1 Onion sliced
- 1 tbsp. Sesame seed optional
In a bowl, mix together the almond flour, salt, and black pepper. Add the pork pieces and coat them in the almond flour mixture.
Heat the coconut oil in a large skillet over medium-high heat. Once the pan is hot, add the pork and cook until browned on all sides, about 5-7 minutes.
In a separate bowl, whisk together the apple cider vinegar, ketchup, Swerve sweetener, tamari or soy sauce, garlic, and ginger.
Add the sliced bell pepper and onion to the pan with the pork and sauté for another 2-3 minutes until they start to soften.
Pour the sweet and sour sauce into the pan with the pork and vegetables, and stir to coat everything. Simmer for 5-7 minutes until the sauce has thickened.
Serve the sweet and sour pork hot, garnished with sesame seeds if desired.
