- 1 lb. Pork tenderloin cut into bite sized pieces
- 1/2 cup Almond flour
- 1/2 tsp. Salt
- 1/4  tsp. Black pepper
- 2 tbsp. Coconut oil
- 1/4 cup Apple cider vinegar
- 1/4 cup Low-sugar Ketchup
- 1/4 cup Swerve sweetener
- 2 tbsp. Tamari or soy sauce
- 2 Garlic cloves minced
- 1/2 tsp Ginger grated
- 1 Bell pepper sliced
- 1 Onion sliced
- 1 tbsp. Sesame seed optional
- In a bowl, mix together the almond flour, salt, and black pepper. Add the pork pieces and coat them in the almond flour mixture. 
- Heat the coconut oil in a large skillet over medium-high heat. Once the pan is hot, add the pork and cook until browned on all sides, about 5-7 minutes. 
- In a separate bowl, whisk together the apple cider vinegar, ketchup, Swerve sweetener, tamari or soy sauce, garlic, and ginger. 
- Add the sliced bell pepper and onion to the pan with the pork and sauté for another 2-3 minutes until they start to soften. 
- Pour the sweet and sour sauce into the pan with the pork and vegetables, and stir to coat everything. Simmer for 5-7 minutes until the sauce has thickened. 
- Serve the sweet and sour pork hot, garnished with sesame seeds if desired.
