Keto Caesar Salad

This is a classic Caesar salad recipe, but with some changes to make it more keto friendly. You will enjoy the creamy and flavorful dressing on top of the crisp lettuce. Keep in mind that the macros might change depending on the size of serving or the protein you add to the salad.
You can add some protein source such as grilled chicken breast, shrimp or baked salmon to make the salad more balanced and filling.
Avoid croutons if you want to keep the salad keto friendly.

Ingredients
  

  • 1 head Romaine lettuce chopped
  • 2 cloves Garlic mined
  • 2 tbsp Parmigiano Reggiano grated
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Dijon mustard
  • 1 Anchovy filet optional
  • Salt and pepper to taste

Instructions
 

  • In a blender or food processor, combine the garlic, Parmigiano Reggiano, olive oil, lemon juice, Dijon mustard, anchovy filet (if using) salt, and pepper. Blend until smooth and well combined.
  • In a large bowl, add the chopped Romaine lettuce and pour the Caesar dressing over top. Toss to coat the lettuce evenly.
  • To serve, divide the dressed salad among plates and garnish with extra parmesan cheese and pepper, if desired.
