- 1 lb. Shrimp peeled and deveined
- 1 tbsp. Coconut oil
- 1 Onion diced
- 2 Garlic cloves minced
- 1 tbsp. Ginger grated
- 1 Red bell pepper diced
- 1 cup Coconut milk
- 1 tbsp. Red curry paste
- 2 tbsp. Fish sauce
- 1 tbsp. Lime juice
- 2 cups Broccoli florets
- 2 tbsp. Fresh cilantro chopped
Heat the coconut oil in a large skillet over medium heat.
Add the onion, garlic, and ginger, and sauté until softened, about 5 minutes.
Add the red bell pepper, and sauté for an additional 2-3 minutes.
Stir in the coconut milk, curry paste, fish sauce, and lime juice. Bring to a simmer and cook for 5 minutes.
